I was just wondering how much you guys paid for a half pound of mature chedder at your local supermarket. I pay £3.24 and I didn;t know if I should be looking around for something a bit cheaper. I do buy a lot of cheese, so over the year the savings could add up to a nice big lump of stilton

That is about £7.15 a Kg for mature cheddar, which isn't too bad really. You could go for something like Edam which is probably the cheapest cheese on the market, but you sacrifice a lot of flavour for that. I wonder if you could buy mild cheddar cheese (which is a lot cheaper) and leave it to mature for a few months?

Wow, Mickey, that's a lot of cheese for a small mouse. I find a few ounces lasts me a long time, and they say my own cheese habit is not inconsiderable. I like the idea of buying mild and letting it mature; if you're really buying half a pound at a time it's likely to mature pretty quickly anyway, surely? Mature cheese, mature mouse: the combination makes a lot of sense.

Yours always,

Minnie M.

Are you sure that cheese can mature once it has been packaged up? Havent all the ripening agents been removed, I guess its down to the bacteria present?

I had a quick look on the internet and couldnt really find much. DOes anyone know if cheese continues to mature in its packet???
